1 lb Fresh butter beans
1/2 lb Salt meat; parboiled and
-diced
1 tb All-purpose flour
3 tb Oil
1 lg Onion; chopped
2 Cloves garlic; chopped fine
2 ts Sugar
Salt and pepper to taste
Water
Cajun Butter Beans Preparation
Make a roux with oil and flour. Add meat and onions; Saute until onions and meat are lightly browned. Add butter beans, garlic and sugar; cook for 15 minutes, stirring.
