Ingredients for Carrot Bread Recipe

1 c Shredded carrot
1 c Sugar
3/4 c Oil
2 Eggs
1-1/2 c Flour
1 ts Baking soda
1 ts Cinnamon
1/2 ts Salt
1/2 c Raisins; optional
1/4 c Chopped nuts

Carrot Bread Preparation

Hear oven to 350* Grease (not oil) bottom only of 9×5 or 8×4 loaf pan. In large bowl, blend first 4 ingredients. Add flour, b. soda, cinnamon, and salt . Beat 1 minute at medium speed. Stir in nuts and raisins. Pour into prepared pan. Bake 50 to 60 minutes untill a toothpick inserted comes out clean. Remove from pan: cool completely. If glaze is desired, combine 1/2 cup powdered sugar, 1 tsp. grated lemon peel and 1 Tbsp. lemon juice. Blend until smooth and drizzle over loaf.
