1/4 c Milk
1/4 c Oil
1 c Yoghurt
2 Eggs
1 c Chopped cooked ham
2-1/2 ts Baking powder
3 ts Dry mustard
1/2 c Coarse cornmeal
1 c Flour
Cornmeal Ham Muffins Preparation
Preheat oven to 375øF, prepare pans. Put the first five ingredients into a bowl & mix well. Mix remaining ingredients, add to wet mix until just combined. Spoon into pans & bake for 15-20 mins. Follow-up RSS Comments Feed or Leave a TrackbackI love the fact that the US works in cup measurements, it is so easy to do instead of weighing everything out.
I substituted the ham for canned corn, as we are going to have these with Split Pea and Ham Soup.
I didn’t have any plain flour ( all purpose ) so I used Self Raising instead and 1 scant teaspoon of baking powder ( I was out of that too! )
I baked them in a fan assisted electric oven on 200C for 15 minuted and they came out great!
