Ingredients for Crustless Spinach Quiche (Oregon) Recipe
10 oz Spinach; frozen, chopped
-(thawed and well-drained)
1 c Cottage cheese
1/2 c Sour cream
1/2 ts Salt
1/4 ts Pepper
1/4 ts Seasoning salt
1 c Cheddar cheese**; grated
1 c Mushrooms; chopped
1/4 ts Thyme
6 Eggs beaten
1/4 c Parmesan cheese
Crustless Spinach Quiche (Oregon) Preparation
** A medium cheddar Tillamook cheese if preferred, of course! 
Preheat oven to 325 degrees. Combine all ingredients, except Parmesan cheese, in order given. Bake uncovered 45 minutes. Sprinkle with Parmesan cheese. Let stand 10 minutes. Cut into squares.
