Ingredients for Cucumber Chicken Pita Sandwiches Recipe

1/2 c Plain yogurt
1/4 c Cucumber; finely chopped
1/2 ts Dried dill weed
1/4 ts Dried mint
4 lg Pita bread
4 Lettuce leaves
6 oz Thinly sliced fully cooked
-chicken breast
1 Tomato; thinly sliced
1/3 c Feta cheese; crumbled

Cucumber Chicken Pita Sandwiches Preparation

A very refreshing, Greek-inspired pita wrap, great to serve on a hot day. From a wonderful little checkout stand cookbook called, Dinner on the Double, by Better Homes and Garden. First make dressing: Stir together yogurt, cucumber, dill weed and mint in a small bowl. For each sandwich: place a pita round on a plate. Top with lettuce, chicken and tomato. Spoon dressing on top.
