Ingredients for Curried Diced Apple Recipe
1 c Golden Delicious apple,
-peeled, split, cored, cut
-in 1/4 dice
1 ts Curry powder
1/4 ts Saffron threads
-OR
1 pn Saffron powder
Salt
Freshly ground pepper
Curried Diced Apple Preparation
Place the apple dice with water in a pan over medium heat. Add the curry powder, saffron and salt and pepper to taste. Mix well, cover with a lid, and cook for 3 minutes over medium heat. Strain and keep warm on the side until ready to serve soup. To serve soup, pour soup into bowls, sprinkle with diced curried apple, and garnish with snipped chives. Serve 4-6.
