Ingredients for Fig Walnut Crumble Recipe

3 c Chopped fresh Figs
2 Eggs
1/3 c Orange juice
1/2 c Packed brown sugar
2 tb Flour
2 ts Grated orange rind
1/4 ts Baking powder
3/4 c Chopped walnuts
Whipped cream or ice cream
CRUST:
1 c Regular rolled oats
1/2 c Flour
1/4 c Packed brown sugar
1/4 ts Salt
2/3 c Butter or margarine

Fig Walnut Crumble Preparation

Prepare Crust: Preheat oven to 350 F. Grease and 8x8x2 baking pan. In a medium bowl, stir together oatmeal, flour, brown sugar and salt. Using a pastry blender, cut in butter or margarine until mixture resembles small peas. Sprinkle 1/2 of mixture in bottom of greased baking pan. Press down well. Bake crust about 12-15 minuts or until lightly browned. Set aside remaining crumbs mixture. Filling: In medium bowl, beat eggs until frothy. Add orange juice, brown sugar, flour, orange peel and baking powder. Beat about 3 minutes or until slightly thickened. Stir in figs and walnuts. Pour mixture over baked crust. Sprinkle on remaining crumb mixture. Continue baking for 30-35 minutes more or until mixture is set in center. Cool and cut into 9 squares or into 16 bars. Can serve topped with whipped cream or ice cream. FRESH FIGS: One medium fresh fig has about 40 calories. Figs have up to 30 times the calcium of other fruit and are generous sources of potassium, magnesium an B vitamins. Purchase fresh figs when they are still slightly firm to the touch, pump and well shaped. Avoid flattened, bruised or split fruit. To store for up to 3 days, Place in refrigerator in a single layer on paper towel lined plate. To Prepare: Trim off the hard portion of the stem end. Eat, skin and all, as a snack or dessert or slice and eat with cream or a squirt of lemon or lime juice.
