Green Tomato Pickles

7 lb. green tomatoes
2 lb. onions
2-3 lb. green cooking apples (Granny Smith)

Chop fine.  Sprinkle with pickling salt and let stand overnight.  Stir periodically.

In morning:

Drain and add:

2 1/2 - 3 lb. brown sugar (or to taste)
4 cups vinegar
1 tsp. each of ground cloves, cinnamon &amp; allspice.

Boil together until clear and seal in jars.  Approx. 12 pints...6 quarts.</description>
