Ingredients for Halibut with Braised Vegetables Recipe

2 c Onions — chopped
1/2 c Tomato juice
1/2 c Apple juice
2 Cloves garlic — chopped
Fine
1 c Bell peppers — chopped
1 c Corn — frozen
2 tb Lemon juice — at room
Temperature
1 tb Mustard — prepared
1/4 ts Salt
1/4 ts Black pepper
1-1/2 lb Fish fillets

Halibut with Braised Vegetables Preparation

Preheat oven at broil. Prepare a broiler pan rack lined with foil with cooking spray. Prepare a loaf pan l with cooking spray. Heat onions, tomato juice, apple juice, and garlic to boiling in 2 quart saucepan; reduce heat to medium. Cook uncovered about 10 minutes, stirring occasionally, until most of the liquid has evaporated. Stir in remaining ingredients except fillets. Cook uncovered 6 to 8 minutes or until corn is tender. Cover and remove from heat. Place fillets on rack in broiler pan. Broil with tops about 4 from heat about 10 minutes or until fillets flake easily with fork.
