Ingredients for Low-Country Barbecue Sauce Recipe

2 c Chopped tomatoes
1 md Onion; finely chopped
1/4 c Butter or margarine; melted
1/4 c White vinegar
1 tb Sugar
1 tb Paprika
1 tb Pepper
2 ts Salt
1-1/2 ts Worcestershire sauce
1/4 ts Hot sauce
1 Clove garlic
1/2 Red pepper pod

Low-Country Barbecue Sauce Preparation

Process tomatoes through a food mill or pulse several times in a food processor. Saute” onion in butter in a medium saucepan until tender. Stir in tomatoes, vinegar, and remaining ingredients; bring to a boil. Reduce heat, and simmer sauce, uncovered, 15 minutes, stirring occasionally. Remove and discard garlic and red pepper pod. Serve sauce over sliced pork. Makes 2 cups.
