Ingredients for Mashed Potatoes (Taurus) Recipe

1-1/2 lb Potatoes (4 medium), peel
-and cube
1/2 c Yellow onion (1 small),
-finely chopped
Water, salted
1/3 c Skim milk, warmed
2 ts Margarine
1/2 ts Salt
1/4 ts White pepper

Mashed Potatoes (Taurus) Preparation

Substitutions: one cup plain yogurt for 1/3 cup warm skim milk. Unsalted butter for margarine. In a medium saucepan combine the potatoes and onions with just enough salted water to cover. Bring the water to a boil and simmer, covered, for 15 to 20 minutes or until the potatoes are tender. Drain. In a large bowl, mash the potatoes and onion with a potato masher; or force them through a ricer into the bowl. Beat in the milk or yogurt, butter, salt and white pepper. Serve 4.
