Ingredients for Mint and Lemon Cookies Recipe

1/2 c Butter
2/3 c Sugar
1 Egg
2 tb Milk
1 tb Rum
1-1/2 c Flour
1/2 ts Baking soda
2 ts Chopped lemon rind
4 tb Chopped mint leaves

Mint and Lemon Cookies Preparation

Cream together the butter and sugar until fluffy. Beat in the egg, milk and rum. Mix together the flour an d baking soda, and stir into the batter. Stir in the lemon and mint leaves. Let the batter sit for several hours, or overnight. Drop the batter in heaping teaspoons, 2 apart, onto a greased cookie sheet.
