Ingredients for Calypso Couscous Recipe

1-1/2 c Orange Juice
1 c Water
1 pk (12-oz) couscous
2 tb Olive oil
1 Navel orange; peeled and
-diced
2 Kiwi fruit; peeled and diced
2 ts Lime juice
2 tb Snipped fresh mint leaves
1/4 c Pine nuts; lightly toasted

Calypso Couscous Preparation

Remove from the heat. Cover, let stand for 30 minutes. In a large bowl, toss the couscous with the oranges, kiwi fruit, lime juice, mint and pine nuts. Serve immediately or chill until ready to serve. Servings: 4 Per serving: 237 calories, 6.8 g fat, (24% of calories), 0 mg cholesterol, 9 mg sodium, 7 g dietary fiber.
